18-19 Months!




Our baby girl is 19 months old already and boy is she ever continuing to grow at a rapid pace! Some days I feel so tired I can't keep up! Here a few pictures and an update on what she's doing these days!


Sleep:
10-11 hours a night
1 nap- 2-3 hours usually

Development:
Words She's Saying:
Momma, Dadda, puppy, baby, es pease (yes please), NO, nanna (Susannah), ank you (thank you), eh e is (there she is), ish (fish), ey (hey), buh bye, Pawpaw, Nana, Meme

Things She's Doing:
*She LOVES any kind of stuffed animal or baby doll! One of her most favorite things to do is put them in her stroller and stroll them around the house. By the way, she is POSSESSIVE over the stroller. So you better watch out and not lay a finger on it when she's around or she'll chew you out in her baby language. Although Caroline doesn't seem to say as many words at this time as SG she still understands A LOT more than she verbalizes. I can give her simple directions for things that I'm not sure if she really understands and she'll do them.
*Caroline has just recently started to like being dressed up! I'm sure you can imagine where she gets this from (Susannah Grace). She's always loved wearing necklaces, bracelets, or purses but now that has progressed into wanting to wear princess dress too!
*She also LOVES swinging on our new swing set!
*She pretty much knows all her body parts (or the main ones).
*Caroline also knows a few animals and their sounds.
*In the last month or so baby girl has been into EVERYTHING. I have to constantly keep my eye on her or she's trying to climb something she's not supposed to. She's much more of a busy body than SG was. Even when the TV is on she likes to be moving around and playing. There are only brief moments when she'll stop to watch something, and it's usually Dora.
*One of the funniest things about her is that she is truly a little bull dog. I really think she might even be stronger than SG (and SG is a pretty strong child herself).
*Perhaps her favorite word right now is "NO." I think we're getting a little closer to 2 if you know what I mean!

Princess Party!

Our little princess had a party fit for a queen on February 23rd! Here are a few photos of her big day! She LOVED getting to spend the day with so many sweet family members and friends. Thank you to everyone who was able to attend. She had such a magical day!























Baby girl we love you so much! You are, for sure, our little princess. Our greatest hope and prayer is that you come to know the King of Kings and Lord of Lords, Jesus Christ our Savior, very soon. He's the only one who can make you a REAL live princess. May His grace and love come to fill your heart so that you can be an outstanding testament of his love and mercy.

Spinach Quesdillas!

Spinach Quesadilla Recipe


If you like cheese and spinach, you are in for a real treat! I've always loved these two items individually, but when you combine them and add a few other delicious ingredients it creates a little favor explosion in your mouth and will have you wanting more! Not only is it delicious, it's healthy too! When visiting Mexican restaurants that seem a little questionable to me I always order a spinach quesadilla as my entree. I'm a little funny about ordering meat from some restaurants, so this is a great healthy alternative. Therefore, because I enjoy this entree, I decided to come up with a homemade recipe for myself! I didn't think it could be that complex. The flavors seemed simple enough, right? Well, you decide for yourself, but I think it's pretty tasty if you ask me!



 Step 1: Gather your ingredients. You need: butter, a bag of spinach, one bag of monterey jack cheese, a container of queso, one sweet onion, 3 cloves of garlic, one-two tomatoes, tortillas, and salt, pepper, garlic salt, and chili powder to taste!

 Step 2: Dice the onion!


 I think using this technique makes it so much easier and quicker!


Step 3: Place 1-2 tablespoons of butter in the pan and allow it to melt.


Step 4: Sautee your onion with salt and pepper for a few minutes until it's nice and translucent.




Step 5: Mince your garlic. I like to use a cheese grater or fruit zester to do this. It just grates it much more finely than a knife does and takes much less time! Now, throw your garlic in with your onion and cook for 1-2 minutes.


 Step 6: While your onion and garlic is cooking dice your tomato. Notice I'm using a bread knife to do this. This knife makes it very easy to slice tomoatoes. When using a regular knife you'll notice that tomatoes can be very slippery and a nuance to cut. The bread knife is a useful tool that makes cutting tomatoes a cinch.

Step 7: Throw your tomato in the pan with a little bit more salt and pepper and let it began to cook down a bit until it's nice and mushy. Meanwhile, roughly chop 6 cups of spinach.



 Step 8: Then, place your spinach in and allow everything to merry together and really cook down. Once it has cooked down, add salt, pepper, garlic salt, and chili powder to your liking. I just add a little and taste it until it's got the flavor I want.



Step 9: This is how it should look before you add the ingredients to the tortilla.


Step 10: Now, add about 1/2 a tablespoon of butter to the pan and place a folded tortilla in an opened position in the pan.


Step 11: Layer ingredients: a handful of cheese, spinach mixture, and another handful of cheese on top!


 Step 12: Flip the tortilla back and forth until the cheese on both sides are nice and melted, kinda of like a grilled cheese sandwich!

Step 13: Melt the queso cheese you purchased in the microwave (according to the directions listed on the container) and drizzle it over the top of your quesadilla!

Step 14: Get it in your belly! Ha! Enjoy!


Spinach and Cheese Quesadillas
(Serves 2-4)

Ingredients:
1-2 TBSP butter
1 Package Spinach
1 Sweet Onion
2-3 Cloves of Garlic (minced)
1 Tomato (diced)
Monetary Jack Cheese 1 pkg
Salt and Pepper
Garlic Salt
Chili Powder
Queso dip

Directions:
1.    Melt 1-2 tablespoons of butter in a skillet and sauté onions until nice and tender.
2.   Once onions are tender, add garlic until fragrant and somewhat tender (1-2 minutes). Add salt and pepper.
3.   Place tomato in skillet and allow to merry with favors and cook down a little. Add a little more salt and pepper.
4.   Meanwhile, roughly chop about 6 cups or so of spinach and add to the mixture in the skillet.
5.    Once spinach is nice and tender add garlic salt and chili powder to taste, pull off heat, and set aside.
6.   Place 1 TBSP of butter in a skillet while placing the flour tortilla on top.
7.    Put a handful of Monetary Jack cheese on bottom of tortilla, layer in spinach mixture, and more monetary jack cheese.
8.   Flip quesadilla a couple of times in order to cook evenly for cheese to melt on top.
9.   The top should also be nice and golden.
10.         Serve immediately with queso on top!

"Have Yourself a Merry Little Pinterest!"

To say that I LOVE decorating, at any time of the year, is an understatement. However, at Christmas it is definitely heightened! I absolutely LOVE decorating for CHRISTMAS! So, since we moved, this year, I wanted to add a few new decorations to my new home! The only thing is I didn't have a very large budget. So, I had to be smart about it. That's where Pinterest came in to play. I would say Pinterest is like crack to me! I just can't get enough! I love all the DIY projects you can find, as well as photos that help inspire you to create a warm and beautiful home environment. Here are a few projects I tackled this holiday season, along with pictures of the pinterest photos that inspired them!

I used a fresh boxwood wreath from Whole Foods because the preserved kind were a little out of my price range this year.

I used $0.99 embroidery hoops and painted them green. Then, I went out in my backyard and clipped fresh greenery for the wreaths. Floral wire was used to apply the greenery to the hoop.
